Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1-2 tablespoons cold water (as needed)
  • 1 ¼ cups (250g) Greek yogurt
  • 1-2 tablespoons honey or maple syrup (optional, for sweetness)
  • 1 teaspoon vanilla extract
  • Fresh mixed berries (e.g., strawberries, blueberries, raspberries) for topping

Instructions

Step 1: Prepare the Tartlet Dough

Combine Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, and salt.

Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces.

Add Egg Yolk and Water: Add the egg yolk and 1 tablespoon of cold water to the mixture. Mix gently, adding more water as needed until the dough just comes together.

Chill the Dough: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Bake the Tartlet Shells

Preheat the Oven: Preheat your oven to 350°F (180°C). Grease or line mini tartlet pans with parchment paper.

Roll Out Dough: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles slightly larger than your tartlet pans.

Fit Dough into Tartlet Pans: Gently press the dough circles into the tartlet pans, trimming any excess dough. Use a fork to prick the bottom of each crust to prevent it from puffing up.

Bake: Place the tartlet shells on a baking sheet and bake for 12-15 minutes, or until the edges are golden brown. Remove from the oven and allow them to cool completely.

Step 3: Prepare the Yogurt Filling

Mix Yogurt Filling: In a bowl, combine the Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until smooth and well blended.

Step 4: Assemble the Tartlets

Fill Tartlet Shells: Once the tartlet shells have cooled, spoon the yogurt filling into each shell, spreading it evenly.

Top with Berries: Arrange fresh berries on top of the yogurt-filled tartlets. Feel free to mix different types of berries for a colorful and flavorful presentation.
