Ingredients

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour, spooned and leveled
  • 1 cup (120g) graham cracker crumbs (about 8 full-sheet graham crackers)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (180g) semi-sweet chocolate chips
  • 1 heaping cup marshmallow creme (store-bought or homemade)

Instructions

1. Prepare the Baking Pan

Preheat your oven to 350°F (177°C). Line an 8-inch or 9-inch square baking pan with parchment paper, leaving enough overhang on the sides to easily lift the bars out later. Set the pan aside.

2. Make the Cookie Dough

In a large mixing bowl, use a handheld or stand mixer fitted with a paddle attachment to cream the softened butter and brown sugar together on medium-high speed for about 2 minutes. The mixture should be light and fluffy. Add the egg and vanilla extract, and beat until well combined. If the mixture appears slightly curdled, don’t worry—that’s normal.

3. Combine the Dry Ingredients

In a separate medium bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, beating on medium speed until the dough comes together.

4. Assemble the Layers

Press and spread about two-thirds of the graham cookie dough evenly into the bottom of the prepared baking pan. The dough will be sticky, so using your hands may help. Spread the marshmallow creme over the dough layer as evenly as possible, though it may be a bit tricky due to its stickiness. Sprinkle the chocolate chips evenly over the marshmallow layer. Take the remaining cookie dough, flatten it into small pieces, and arrange them over the chocolate chips. Some marshmallow and chocolate will peek through—that’s okay!

5. Bake the Bars

Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is lightly golden brown. Once done, remove the pan from the oven and set it on a wire rack to cool completely.

6. Slice and Serve

Once the bars have cooled, use the parchment paper overhang to lift them out of the pan. Cut into squares and serve. Enjoy the gooey, chocolatey goodness of your S’mores Cookie Bars!

FAQs

1. Can I use mini marshmallows instead of marshmallow creme?
Yes, you can substitute mini marshmallows for the marshmallow creme. Spread them evenly over the cookie dough layer before adding the chocolate chips. Keep in mind that the marshmallows may puff up during baking.

2. How should I store the leftover bars?
Store the leftover S’mores Cookie Bars in an airtight container at room temperature for up to one week. You can also refrigerate them if you prefer a firmer texture.

3. Can I freeze these bars?
Absolutely! Once the bars are completely cooled, wrap them tightly in plastic wrap and store them in a freezer-safe bag or container for up to 3 months. Thaw at room temperature before serving.

4. Can I add extra toppings?
Feel free to get creative! You can add a drizzle of melted chocolate or sprinkle some crushed graham crackers on top for an extra touch of flavor and texture.

5. What if I don’t have graham crackers?
If you can’t find graham crackers, you can use digestive biscuits or other similar cookies as a substitute. The flavor might vary slightly, but the bars will still be delicious.
