Ingredients

  • 1 (17.3-ounce) package puff pastry, thawed
  • 6 slices Swiss or cheddar cheese
  • 4 ounces ham steak, finely chopped (about ¾ cup)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons cornichons (finely chopped)
  • 1 egg, beaten with a splash of water
  • 1 teaspoon caraway seeds (optional)

Instructions

Step 1: Prepare the Oven and Puff Pastry

  • Preheat your oven to 350ºF (177ºC) and line a baking sheet with parchment paper.
  • Roll out the thawed puff pastry and cut each sheet into 2-inch x 3-inch rectangles (about 20 pieces per sheet).

Step 2: Prepare the Filling

  • In a food processor or by hand, finely chop the ham, cornichons, and Dijon mustard until well combined but still slightly chunky.

Step 3: Assemble the Pastries

  • Place a small piece of cheese in the center of half of the puff pastry rectangles.
  • Spoon about 1 to 1 ½ teaspoons of the ham mixture on top of each cheese piece and gently press to flatten.
  • Add a second piece of cheese on top of the ham mixture.
  • Brush the edges of the puff pastry with the egg wash (beaten egg mixed with water), then place another piece of puff pastry over the filling.
  • Use a fork to crimp the edges and seal the pastry.

Step 4: Add Finishing Touches and Bake

  • Brush the tops of each puff pastry with the remaining egg wash and sprinkle with caraway seeds if desired.
  • Use a small knife to cut two tiny vent holes in the top of each pastry to allow steam to escape while baking.

Step 5: Bake to Golden Perfection

  • Bake the puff pastry bites for 20–25 minutes, or until they are puffed up and golden brown.
  • Let them cool slightly before serving.

FAQs

Can I make these puff pastry bites ahead of time?

Yes! You can assemble the puff pastry bites and refrigerate them for a few hours before baking. This makes them an excellent make-ahead option for parties.

Can I freeze these pastries?

Absolutely. You can freeze the assembled, unbaked pastries on a baking sheet. Once frozen, transfer them to a sealed container or freezer bag. When ready to bake, you can bake them directly from frozen—just add an extra 5-10 minutes to the baking time.

What other fillings can I use?

Feel free to experiment! These puff pastry bites are versatile. You can substitute the ham for cooked bacon or turkey, and try different cheeses like Gruyère, mozzarella, or even brie for added flavor.
